Simply the best soft sandwich loaf - made with Barton Springs Mill's Big Country Flour using a Tangzhong for ultimate squishiness without any additives or dough conditioners!  Big Country is a hard white winter wheat, making it super strong, yet lightly colored with a lovely, creamy wheat flavor.  We add Mill King Milk, Cedar Ridge Farm Eggs, Plugra Butter, a pinch of Sea Salt to our Barton Springs Mill fed starter and bake in a lidded pullman pan for a perfectly square loaf ready for toasting!
